Floor vs Dome Temperature: Reading Your Oven
Why one number is not enough, what the two temperatures do to a pizza, target ranges for different products, and how to fix a burnt base or a pale top.

Most oven problems that get blamed on the oven are actually a mismatch between two temperatures. Understanding the difference solves more cooking complaints than any equipment change.
Two temperatures, two jobs
Floor temperature is conducted heat. It cooks the base directly, by contact. It determines how fast the bottom sets, how much lift you get, and whether the base chars.
Dome temperature is radiant heat. It cooks the top — melting cheese, blistering the cornice, colouring the crust. It is normally higher than the floor and the gap between them varies through a service.
A single number tells you nothing useful, because the two can drift apart independently.

Note how much of the useful range sits below pizza temperature. That is the falling curve after service, and using it is where the fuel economics improve — see running costs.
Diagnosing from the pizza
The pizza tells you which temperature is wrong:
- Burnt base, pale top — floor too hot relative to dome. Let the floor cool, or move the fire and give the dome time to recover.
- Cooked top, soggy base — floor too cold. Sweep embers briefly across the launching area to recover it.
- Both burning, centre raw — everything too hot. Let it settle; you have overshot.
- Nothing colouring, long bake — everything too cold. The oven is not up, or the fire has died back too far.
- One side consistently darker — uneven floor, usually from always launching in the same spot. Rotate your launching position.
Measuring properly
An infrared thermometer is the single most useful tool you can buy for a brick oven, and it is inexpensive. It reads surface temperature instantly, which is exactly what you need.
Measure the floor where you actually launch, not in the middle if you never cook there. Take the dome reading at the crown. Do the same two spots every time so your readings are comparable rather than approximate.
One caveat: infrared reads surfaces, so it will read glowing embers rather than brick if you point it at the fire. Read clean floor.
The soot-clearing indicator
Before thermometers, operators read the dome. As an oven heats, soot deposits blacken the dome; at around 350 °C that soot burns off, starting at the crown and spreading down.
A fully cleared white dome means you are at working temperature. It costs nothing, needs no equipment, and works in any wood-fired oven. Use it as a cross-check on your thermometer — if they disagree, something is worth investigating.
Why the floor drops during service
Every cold pizza base takes heat out of the floor by contact. In a busy service, launches come faster than the floor recovers, and the temperature walks downward.
This is the recovery problem, and it is the main reason commercial ovens carry more mass than domestic ones — the argument in commercial versus domestic. It is also why sizing on peak hour matters: an undersized oven does not fail, it just sags.
Practical mitigations: rotate your launching position, keep a live flame rather than embers alone, and give the floor a few seconds between launches in the same spot.
Managing the gap between floor and dome
If the dome runs far hotter than the floor, you have a fire that is heating the roof and not the hearth — usually too small, or burning too high and too briefly. Build it up and let it work longer.
If the floor runs hotter than the dome, you have likely just swept embers across it, or the fire has burned down while the floor retained mass. Give it time; the dome will recover from the fire faster than the floor will cool.
Keep a note
Operators who record floor and dome readings at the start of each service quickly learn their own oven — how long it takes, how it behaves at different ambient temperatures, when the wood batch has changed.
It takes ten seconds and it turns oven management from guesswork into something you can hand to a new member of staff. It also tells you early when something has changed for a reason worth investigating, which is often the first sign that insulation has been compromised.
Choosing and using an infrared thermometer
Any inexpensive unit reading to 550 °C will do. Two practical points that affect accuracy more than price:
Distance-to-spot ratio. A 12:1 unit reads a 10 cm circle from 1.2 m away. Stand too far back and you are averaging floor, fire, and dome. Take readings from a consistent distance.
Emissivity. Most units assume around 0.95, which is close enough for firebrick. But do not point it at glowing embers or bare flame and expect a floor reading — it reads whatever surface is in the spot.
Read clean floor at your launching position, and the dome at the crown. Same two points every time.
What the gap between them tells you
Dome hotter than floor by a wide margin usually means the fire is heating the roof and not the hearth — often a fire that is too small, or burning high and briefly rather than steadily. Build it up and let it work longer.
Floor hotter than dome usually means you have just swept embers across it, or the fire has burned down while the floor retained its mass. The dome recovers faster than the floor cools, so this generally resolves itself.
Both dropping together through service means you are outrunning the oven — either the fire needs feeding or the oven is undersized for the throughput.
Ambient conditions matter more than expected
The same oven behaves differently on a cold highland morning and a humid coastal evening. Heat-up takes longer from a cold start in cool weather, and an oven in a draughty outdoor position loses more through the mouth.
This is why keeping a log is useful: it lets you separate "the oven is behaving differently" from "today is different", and only the first is worth investigating.
Temperature by product, quick reference
If you are cooking across the curve, work downward rather than trying to hold one temperature: Neapolitan first at the top of the range, then thin-crust and pan styles, then bread, then roasting, then slow cooking and drying overnight on residual heat.
