Trailer-mounted and relocatable ovens for caterers working across sites.
Catering ovens have to survive being moved, and that changes the build in ways a fixed installation never has to consider.
Built to be transported
Thermal cycling and road vibration are a difficult combination for refractory. A relocatable oven wants a lighter dome, a mechanically restrained hearth, and a flue that breaks down for transport — all specified so that the castable does not crack after a season of being driven between venues.
A standard fixed-site build put onto a trailer will not last. It is not built for the loads.
Firing on site
Event work means firing from cold, often against a clock, sometimes in weather. That argues for a smaller dome that reaches temperature in an hour rather than a commercial mass that takes three, and for gas where the schedule is tight or fuel storage is impractical.

Fuel logistics
Wood has to travel with you and stay dry, which in the rains is a real constraint. Gas removes the storage problem and the ash handling, at the cost of the smoke that clients often specifically want to see.
For caterers whose brief varies — a wood fire as part of the spectacle for one client, quiet efficiency for another — a hybrid genuinely earns the extra cost, which is not something we say often.
Repair and relining
Mobile ovens shake apart faster than fixed ones. Cracked castable, loosened hearth tiles, and flue joints working free are all normal after heavy use.
Most of it is repairable rather than terminal, and relining is usually a fraction of replacing the unit. Catching it between seasons is far cheaper than discovering it at a wedding.
Fixed venues
If you run a permanent event space rather than travelling, the calculation changes entirely — a 120 cm dome built in place will hold temperature through a 250-cover function in a way no transportable oven can.
