FAQs

Can we use this as a pizza oven too?
It will cook excellent pizza, but nobody should buy it for that. It takes three hours to reach temperature against 90 minutes for a pizza dome, and the extra mass you are paying for is only an advantage on a long bake. If pizza is the main product, buy a dome.
Do we need steam injection?
For crusty hearth breads and sourdough, it makes a real difference to oven spring and crust. For tinned and enriched breads it matters much less. It has to be built in at construction — it cannot be retrofitted sensibly — so decide before we start.
How long does the heat actually last?
10–12 hours of usable temperature from a full charge. Bread at the top, roasts through the middle, slow cooking and drying at the bottom. Bakeries that plan the day around the curve get three distinct uses from one firing.
Why does it take three days to cure?
Mass. There is far more water bound into 2.6 tonnes of brick and castable than in a pizza dome, and it has to leave slowly. Fire it hard too early and steam pressure cracks the hearth or the arch. We run the full schedule ourselves before handover.
What footprint and floor loading does it need?
1800 × 1650 mm and around 2.6 tonnes, which nearly always means ground floor on a slab. Floor loading is checked at survey; if the structure will not take it we will say so before you commit.
