Barrel Vault OvensBESS-OVN-BV-110
A deeper, straighter chamber for trays, roasts, and mixed loads.
Brillian builds and supplies the Barrel Vault Oven 110 across Tanzania. A 110 cm barrel-vault chamber rather than a dome — more usable floor for trays and roasting pans, and a more even heat front to back for mixed cooking.
Delivered to Tanzania from Nairobi, with our build team travelling for on-site installation around Dar es Salaam. Typical lead time 28 days plus transit.

Features
01
Takes standard roasting trays and 1/1 gastronorm pans, which a hemispherical dome cannot without improvised supports.
02
Consistent roof height spreads heat across the whole floor rather than concentrating it in a hot centre.
03
Pizza, roasts, trays of vegetables, and bread out of one oven without compromising the loading.
04
More of the floor is practically reachable and usable than in a dome of equivalent nominal size.
05
High-alumina hearth, firebrick arch in castable, ceramic fibre and rockwool — only the geometry changes.
06
Straight walls and consistent height make peel work more predictable for less-experienced operators.

Industry applications
The rectangular floor suits bread tins and tray loads in a way a round dome floor never does.
Pizza at lunch and roasting trays at dinner out of one chamber, without improvised loading.
For restaurants where pizza is part of the menu rather than all of it.
Batch roasting and tray service for functions where a dome would limit what fits inside.
Why Brillian
We will steer you to a dome if you are cooking pizza only — the vault is for mixed loads.
Chamber proportions set from what you actually cook, not a standard drawing.
Built to take commercial gastronorm sizing rather than improvised trays.
Same refractory stock and curing discipline as our dome ovens.
Relining and repair support as the hearth wears.
Use case
A Nanyuki lodge kitchen chose a vault over a dome because the same oven had to run pizza for guests at lunch and roasting trays for dinner service. The rectangular floor takes standard gastronorm pans, which the dome they replaced could not accommodate without improvised trivets.
